Elle, some of those problems sound familiar.  Sorry that you have to deal with it :(

Ethernet: Casper and Sailplane both use cheap Ethernet-to-fiber converters and say that it helps a lot. I ordered two identical ones on eBay and should have them in a few days. They cost ~$30 with a 60' fiber cable.

Office: The keyboard and mouse are probably the biggest problems aside from the network cables. There are some old infrared ones that are very clean when they're idle, but they're just as bad as others when they're in use. PS/2 might be better than USB if your keyboard is wired. Another workplace that might be adaptable would be a food truck.

Jerking up at night and having visual flashes: I got both of these when I tried to change the way I sleep. They seem to be going away as I switch back to wearing something quite tight at night. I don't know if it helps blood flow (like compression shorts/leggings) or if it helps with tactile disorientation from whatever the source of the trouble is. I used to wear some old cycling shorts, or just wrap a blanket or sheet really tight.

Jury duty: This one makes me a little nervous too, since it was no fun last time :-/  It might be worth checking how your state selects jurors. I Minnesota the list is drawn from the driver's license registry, so anyone who doesn't need to drive can avoid it. In the long term you could look for a house in a district with a low number of trials per capita.
