Very good question. I never seen a EHS diet yet..but we can probably come up with one based on the evidence of what could cause it and what nutrients are beneficial.
Make sure you're not allergic to anything you're eating, like gluten, or dairy. I was allergic to gluten for years until I figured it out.. dairy is easy to find out.
The gluten free society says it could cause nerve damage, which could be the cause for EHS..(a lot of could) but basically, one or two weeks without gluten and you will know because you will feel an improvement, or no difference.
