Sorry to hear re your candida and headaches. I had real problemswith candida too. The interesting thing about candida is their "bodies" [for lack of a more scientific term ;) ] have an appendage which has an almost identical chemical structure as gliaden--the part of gluten that most people with "gluten" sensitivity are most reactive to. So a gluten sensitive person often reacts to candida too. (Not that one necessarily needs to be gluten intolerant to react to candida.)

It's not the gluten that I am allergic to, I have a mild wheat allergy due to candida issues. I seem to do fine with these broths but then again I always have a headache( that's usually my symptom) so who knows what it's fromthese days. too many variables. I can understand about other ingredients in the tortillas. Wish I paid more attention(while working at an orphanage in Mexico how to make them from scratch. :(

Ooops, Kris,
Sent too soon. Was going to mention I had problems with Pacific Foods broths. They seemed to be contaminated with gluten and they specifically say gf!So if you have problems with being very sensitive to glutens, be especially careful of that brand. (But I have seen the same problem with other brands too--it is like playing Russian roulette when I use canned broth. It is the one item which I never know ahead of time whether it is going to cause areaction. I had to begin making my own due to that.

I've noticed some I can tolerate and others not, but hadn't realized it could be a brand issue. What brand of corn tortillas do you buy usually?
I do get an organic Free Range Chicken and Beef broth from Pacific foods that I can tolerate really well. That helps a lot to have these as the base of my cooking.

Yes, that is the way I go, too. About the only thing I still buy manufactured are corn tortillas and I am having problems now finding the healthy(ier)brand locally.
