I think porcelain contains (or can contain) metal, so that would
probably be a bad idea for someone with ES. Composites are probably
better, although there are different composite materials, some which may
be good, and some not (depending on whatever you might react to).
Sometimes doctors will do materials compatibility testing, either with a
blood test or "muscle testing", but I can't vouch for either of them
being entirely accurate (although I have had both done in the past, and
didn't have any problems afterward).

Yes, some dentists are "anti-root canal", due to chronic low level
infections that may be left behind. Such dentists would probably pick
extraction as the healthier option.
