I suspect that if one is having digestive problems from EMF fields, they
probably have a high level of heavy metals in their intestines. A good
probiotic may help this problem -- I use Primal Defense, which I find
is also helpful for my computer tolerance. Some strains of probiotics
seem to "eat" heavy metals, which may make them helpful for heavy metal
detox.
I personally think a lot of my problems (including the ES) were from heavy
metals.

I've had a huge improvement from my ES problems of 5 years ago, but I'd
have a hard time isolating the number#1 reason for my improvement. Could
be diet, in that I'm getting more of the vitamins/minerals, etc. that I
was deficient in. Could be EMF protection devices, which I suppose is
the same thing as avoidance without actually have to avoid anything. :-)
As for exclusion diets, it's true that I've cut out a lot of things from
my diet, but the notion that one should generically eliminate fruit,
nuts, etc. has always seemed a bit absurd to me, as these foods are loaded
with nutrients that sick people are in need of. I think people should
decide for themselves if a particular food is making them worse, rather
than follow some "expert" advice on foods to eliminate.
