This has been my experience also, Cara. It is also typical of folk
with chemical sensitivity. I remember when I had my first
conversation with another person having significantly strong CS about
living with it. She kept describing how sometimes she'd feel great
one day after doing everything right, then not being able to replicate
it in the days afterward.

What Andrew shared around this is also intimately familiar. Change in
conditions can bring a new or previous equilibrium state. It is a
commonly observed phenomenon in homeopathic treatment and tracking of
chronic conditions like this. Exactly as Andrew pointed out, in the
absence of a major incitant our systems many times restructure
themselves into a new or previously experienced expression. This new
or previous expression may be the attempt by our now stronger systems
to deal with what is affecting them. And it can feel worse than
better. I can't say this is the case with your husband but it is
frequently the case in the process of healing from chronic illness.

Also, when I'm suddenly feeling better again, I sometimes
unintentionally overdo it while enjoying my newer, less symptomatic
state and the next day I'm worse off for it. I now try to still take
it easy when I'm feeling better, though the temptation to do more is
understandably strong after being restricted for so long.

There can also be environmental factors happening today which are
contributing, either local or global. Weather that is really cold or
really warm for an area usually brings with it a concurrent increase
in electricity usage, affecting the characteristics of the power
grid's emissions, especially through the creation of "dirty"
electrical patterns. This "dirty" electricity is the addition of
high-frequency harmonics, typically chaotic in amplitude and
frequency, on our wiring. And, nutty as is may sound to some, the
solar weather can contribute, too. Check, http://www.spaceweather.com
for present solar conditions. (Again, the changeover from a
long-standing environmental strong, weak or strong, can also bring a
reaction in some with ES.)

Electrical conditions during sleep also strongly contribute to how the
next day goes. Consciously undetected, strong fields might have been
present that could account for feeling poorly today. Did your husband
have a restless sleep?

Don't lose heart and best wishes,
Beau
