I have thougth on many solutions for two situations:
On the go:
1. Having the phone in the Pocket With corded headset.
2. More Extreme but having the phone mounted just over the foot With such phone straps With corded headset.
3. Bring the phone in the backpack at the bottom With a properly Shield on some sides of it so no radiaton is reaching the body.
4. Activate autoreply Message when out walking "I wiil Call you back later" type.
5. Turn the Call function off..if its important they will sms email. But what if you get that important Call?
When possible and time to arrange:
1. Use a Conference Bluetooth unit or car Bluetooth unit so you can have the Equipment many meters far away from you.
2. Use corded headset With extension cord.

I think you should definitely not have the phone in a pocket or over your foot =).. That's just the worst thing you can do.
A backpack with a shield in between you and phone with a cord coming out of it will be the best possible solution probably.
I know I wouldn't be able to use any bluetooth device close to the body. I guess it all depends on you... how bad your ES is, how much time you spend in high RF places already and how much you use the phone. If you're not that bad, and you're improving, and you have low RF all the time, and use the phone just a few minutes here and there while improving, then it sounds fine.
If you're not getting better and using the phone makes you feel worse, then you know it's not going to work out.
