How can RO water be acidic? If the feedstock isn't?
an RO systems removes all minerals and by prefiltering
also chlorine and organics, it does not Add stuff, and does not change the pH.

If drinking only RO water (without re-adding minerals)
is a good an healthy thing to do?
I'm not in favor of that.
But the link you gave, led to
what seems on the first glimps ( of a chemist)
a pretty good RO system. ( a pre-filter system is a must for
trouble free and longlasting RO.
1 downside of all RO's they spill more water in the sink
then the useable output of RO water.
like 1 gallon of RO water cost ya 3 gallons of tapwater.
Please mind you, any under the tap waterfilter system ( RO or not)
can only be used safely in the long run,
if you also do the neccesary maintainance
and filter exchanges.( Many people neglet this and then get sick of of it).
And once a year take a sample and let
it examine for biological quality is a good idea to.
